Turkey and sweet potato bowl
Roasted sweet potato, spiced turkey mince and a yogurt sauce, in 30 minutes.

Ingredients

- 400 g Turkey mince (7% fat)
- 500 g Sweet potato
- 100 g Greek yogurt, 0% fat
- 100 g Spinach
- 1 onion Onion
- 2 cloves Garlic
- 2 tsp Olive oil
- 15 g Lemon juice
- Cumin, smoked paprika, salt, pepper
Method
- Heat the oven to 220 °C. Cut the sweet potato into 2 cm cubes, toss with half the oil and salt, and roast for 25 minutes.
- Fry the onion in the rest of the oil for 3 minutes, add the garlic, cumin and paprika, then the turkey mince.
- Brown the mince for 8 minutes, then stir the spinach through until it wilts.
- Mix the yogurt with the lemon juice and a pinch of salt, and spoon it over the bowl.

- Swap the turkey for lean beef mince.
- Swap the sweet potato for ordinary potatoes or rice.
