Creamy chicken orzo with spinach
One pan, 20 minutes, and the orzo cooks in the sauce.

Ingredients

- 400 g Chicken breast
- 160 g Pasta, dry orzo
- 100 g Spinach
- 80 g Light cream cheese
- 20 g Parmesan
- 2 cloves Garlic
- 2 tsp Olive oil
- 500 g Chicken stock
- Salt and pepper
Method
- Cut the chicken into strips, season, and brown in the oil over high heat for 5 minutes. Take it out.
- Fry the garlic for 30 seconds, add the orzo and stir it through the oil.
- Pour in the stock, bring to a simmer, and cook for 8 minutes, stirring now and then so it does not stick.
- Return the chicken, stir in the cream cheese, the parmesan and the spinach, and let it wilt. Loosen with a splash of water if it tightens.
Swaps
- Swap the orzo for small pasta shapes and add two minutes.
- Stir in 200 g mushrooms with the garlic.
