Beef meatballs in tomato sauce

Meatballs that cook in the sauce while the pasta boils.

Ingredients for 3
  • 500 g Lean beef mince (5% fat)
  • 210 g Pasta, dry
  • 400 g Canned tomatoes
  • 80 g Mozzarella
  • 1 onion Onion
  • 3 cloves Garlic
  • 2 tsp Olive oil
  • Oregano, salt, pepper, chilli flakes
Method
  1. Mix the mince with salt, pepper and oregano, and roll into about 18 balls .
  2. Brown them in the oil in a wide pan, 4 minutes, turning once. They finish in the sauce, so do not cook them through.
  3. Add the chopped onion and garlic, fry for 2 minutes, then the tomatoes and a splash of water.
  4. Simmer for 12 minutes while the pasta cooks, then tear the mozzarella over the top and put a lid on for 2 minutes.
Swaps
  • Swap the beef for turkey mince and add a spoon of mustard to the mix.
  • Serve on a baked potato or with bread instead of pasta.
